Marc's Xmas Baskets 2010: Spicy Pecans

4 tbsp ( ½ stick) butter
¼ c. honey
1 ½ tbsp kosher salt
2 tsp cayenne pepper
½ pound pecan halves

1. Preheat oven to 325°F.

2. Melt the butter in a medium saucepan over medium heat. Add the honey, salt, and cayenne peppe; bring the mixture to a boil, and cook for 1 minute, stirring.

3. Remove from the heat and add the pecans to the honey mixture. Stir to mix well.

4. Spread the coated pecans on a sheet pan, and bake in the preheated oven for 15 to 20 minutes, stirring every 5 minutes, possibly more often toward the end.

5. Serve when cooled, first separating any pecans that stick together.

6. Store in airtight container.

Chef's Tip: The moisture content of the pecans could leave behind some excess liquid in the pan. If that's the case, cook the nuts a bit longer, being careful not to let them burn, or simply drain the liquid after you've finished cooking the nuts.
